Growing Garlic
1. It is best to buy garlic bulbs from a garden center to ensure that they’re healthy and free of disease. Separate the individual cloves from the bulb.
2. Using a string line, mark out a straight line in your soilbed.
3. Use your finger to push each clove 2 inches into the soil. The clove shoud have the wide root part facing down. Leave 6 inches of space between each clove and 12 inches between rows.
4. In a few weeks, small green shoots will emerge.
5. When the leaves start to turn yellow, use a fork to gently lift the bulbs out of the soil.
Garlic Dip with Crudites
1 large garlic bulb, unpeeled
1 cup Greek yogurt
1 tsp ground cumin
salt and pepper
Juice of 1/2 lemon
An assortment of vegetables for dipping (carrots, celery, endives, cauliflower, red pepper, radishes)
1. Preheat the oven to 280 F. Bake the garlic bulb on a baking sheet for 1 hour.
2. Cool the baked garlic for 5 minutes. Then separate the cloves from the bulb and gently squeeze the cooked flesh out of the skins into a bowl.
3. Using a spoon or fork, mash the garlic flesh until smooth. Mix in the yogurt, cumin, salt, pepper, and lemon juice, tasting as you go and adjusting quantities as needed.
4. Peel the carrots and deseed the peppers. Then chop all your dipping vegetables (a.k.a. crudites) into sticks or bite-size chunks.
5. Place the bowl of dip on a large serving plate and arrange the vegetables around the bowl for dunking.
