Prep Time: 10 minutes, Cook Time: 0, Serves: 2

2 cups (400 g) white beans, cooked or canned

½ cucumber, cubed

8 tomatoes, minced

4 tangerines

1 tbsp. (10 g) thyme, fresh or dried

DIRECTIONS:

1. Soak and cook 133 g dry white beans according to the method if necessary.

2. Put the white beans in a large bowl, and add cucumber cubes, minced tomatoes and thyme.

3. Stir thoroughly with a spatula and mix everything evenly.

4. Peel and section the tangerines and set them aside.

5. Divide the salad between two bowls, garnish with the tangerine and the optional toppings, serve.
